Welcome back to 30-minute vegan meals and this richly spiced, comforting and delicious tagine which is perfect for veganuary and a midweek winner - who wants a bowl?

I love tagine, all the slightly sweet, smokey and rich flavours and this plant-based, high-protein and wholesome recipe is ready in 30 minutes and is GREAT for meal prep or feeding a crowd 🥰
.
The key is the homemade spice blend, lots of ginger, garlic, and the medjool dates which turn so soft and sticky while cooking. I’ve used kidney beans and carlin peas but you can use your FAVOURITE beans to make this tagine high protien and fibre and SO satisfying ⭐️

Aubergine and Bean Tagine 🍆🌱
The ingredients are:
⭐︎spice blend
⭐︎olive oil
⭐︎onion, garlic and ginger
⭐︎aubergine
⭐︎tomato puree and tinned tomatoes
⭐︎harissa paste
⭐︎beans!
⭐︎medjool dates
⭐︎balsamic vinegar

I love to serve this with coconut yoghurt swirl, avocado, fresh herbs, walnuts, pomegranate and some pitta breads or wholegrains ✨
