Struggling to make the perfect meringue? Follow our quick and easy recipe to get a delicious meringue every time. Perfect as a pavlova base or pipe into individual nests to make a mouthwatering Eton Mess.

METHOD:
1. Preheat the oven to 150°C/130°C Fan/Gas Mark 2.
2. Line a baking tray with a piece of baking paper and leave to one side.
3. Add 4 large egg whites to a large, clean bowl, and whisk until it starts to form stiff peaks.
4. Very gradually add 200g of caster sugar, roughly 1 tbsp at a time, and 1 tbsp of cornflour, whisking between each addition, until the meringue is thick and glossy.
5. Spoon the meringue mixture onto the prepared baking tray and, using the back of a spoon or spatula, shape into a circle, roughly 25cm in diameter.
6. Bake in the preheated oven for 60 minutes, or until the meringue is very lightly golden.
7. Turn off the oven, leaving the meringue inside, to cool for 60 minutes.
8. Remove from the oven and allow to cool on a wire rack completely.
