The skill differential was a MUCH bigger factor in the pre-modern period but a lot of these tales of 1 man holding off 10 and the like must have been exaggerated in the telling. Latin knights were incredibly boastful so exaggerated versions of events where genuine heroism was shown is very likely.

Yeah the map really doesn't show just how fragmented the muslim world was. In the Levant you had Turkish commanders like the Artuqid Ilghazi and Sokmen in Jerusalem fighting against the Fatimids. In Syria you had Duqaq and Radwan, sons of the would be Seljuk Sultan and Malik Shah's brother Tutush. Iraq and Persia were a real mess with various governors and commanders fighting over the regency of the Sultans like Mahmud I, Berkyaruq and Malik Shah II. Eastwards in Khorasan and Central Asia you had Ahmad Sanjar, another son of Malik Shah who was basically recognised as the ruler of the eastern half of the empire (Seljuks kinda had a tradition of splitting the empire between Khorasan (East) and Iran, Iraq and everything else (West). In Anatolia you had the junior branch of the Seljuk dynasty under Kilij Arslan who was fighting against numerous other Turkish warlords like the Danishmends and Saltuqids. That's all without mentioning the Fatimid Caliphs who were themselves little more than puppets for their Viziers.

It was the only army the Seljuks managed to gather against the crusaders in this time and their mounted archers were no use in siege battle and no match to the elite heavy infantry
