*Ingredients*
For the cakes:
1 box red velvet cake mix
3 large eggs
1tsp vanilla extract
100ml vegetable oil
100ml water
Red food colouring (optional)

For the icing:
90g unsalted butter, softened
90g cream cheese, softened
250g icing sugar
1tsp vanilla extract

1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan)

2) Line a baking tray with a sheet of baking paper.

2) Add the cake mix to a bowl and add the eggs, vanilla extract, vegetable oil and water.

3) Add a few drops of red food colouring (optional).

4) Whisk until combined.

5) Scoop the mix onto your baking tray in tablespoons and spread each of them into circles.

6) Bake for 7-8 mins.

7) Add the butter and cream cheese to a large bowl and whisk until creamy.

8) Add the icing sugar and vanilla extract and whisk it in gradually.

9) Pipe the icing onto half of the cakes.

10) Add the other half of red velvet cakes on top to make a sandwich.

11) Enjoy!

As a native new Englander, my recommendation is to use 1 part cream cheese 1 part powdered sugar 1 part fluff. That would be more aligned with traditional whoopie pies as the frosting in the middle is 1 part fluff 1 part butter 1 part powder sugar. This would just be a cupcake in a whoopie pie form. The cake is a different texture to regular cake, and the frosting normally has fluff. It would still be a cream cheese frosting but would be more of a nod to the way a traditional whoopie pie should taste.
