Greek Yogurt Chicken -
Chicken breasts cut into bite sized pieces
Toss chicken in salt, pepper, garlic powder, onion powder, paprika,
and 1 cup plain greek yogurt
Roast on sheet pan at 375 for 25-30 min

Salad Dressing -
1/3 cup olive oil
3-4 TBSP red wine vinegar
1 TBSP Dijon mustard
1 TBSP oregano
1-2 TBSP Light Agave, Honey, or Maple Syrup
salt and pepper to taste

Chick Pea Salad -
1 can drained chick peas
1/4 diced red onion
1 cup diced cucumber
1 cup diced pitted olives
2 cups cherry tomatoes
1 cup of feta
1/4 cup salad dressing (see above)

A tip for keeping green onions - put them in a jar with about an inch of water (so the roots are in water). Then you can just cut off what you need and they will regrow in the jar.

Oh Amy your hair is beautiful! You look so pretty and healthy in your navy blue! This video was so informative and I thank you for that! Your grocery haul reminds me of what mine used to be like with four sons and my husband. My sons are all in their 50’s and have their own families to haul for. My husband has passed on so I live alone and my grocery hauls have greatly diminished. With today’s prices that maybe is a good thing. I appreciate your meal sharing. Sometimes cooking for one is tough. Blessings to you all and I’m so eager to see you moving into your new home. Love you! ❤

Amy, I could just cry with thankful tears…you have no idea how much you have impacted my life for the better and therefore my husband and three children…I’ll be 40 in one week and I have had a few new medical issues arise this past year and I have always been pretty “healthy” (bloodwork wise) besides being overweight. I have a history of being in great shape and now I’m the worst/biggest I’ve ever been but I’m changing, and you have inspired me. Thank you! I love you! These videos mean so much to me and I watch them over and over.

Wow! How did you know that I needed to hear your message today? I am feeling rather melancholy today, which is very unusual for me. I have lost 30 lbs but is having a difficult time staying on tract right now and that is very discouraging. Along with not seeing our kids, selling a rental home, caring for our aging dog and my husband’s diagnosis of dementia. I’m usually very organized and upbeat; but feeling overwhelmed right now. Can you make a BOOK on your weight loss journey?
What you did. Didnt do. What you ate. Gave up. The struggles. The rewards.
I would buy it.
Maybe not even a book, do a calendar!
Instead of pictures per month add a bunch of pictures and recipes.
I have saved so many of your videos on my phone its full. I screenshot so much.

Amy I absolutely agree with you about how you feel when eating out as opposed to not eating out. I feel like a train wreck literally when eating out and found packing my own food from home taking it with me helps cut down tremendously not with just weight loss but how I feel in general! I have a lunchbox I take along and whether it be some healthy snacks a healthy sandwich it literally takes less than 5 minutes to pack it up and get on the go. This helps tremendously!:) my body feels so much better and just helps with my overall health when going out instead eating out at restaurants and all the processed foods! Thanks so much for your informative videos and very helpful ❤❤

Amy. thank you for sharing your healthy, simple meal prep. You are such an inspiration to so many and I appreciate how easy and doable you make things. Today I prepped your: chicken (in the seasoning and yogurt), a tray of cut up sweet potatoes, hard boiled eggs, pickled red onion and salad dressing. Tonight I am also making your ramen chicken recipe. I bought a bunch of other veggies I can roast this week to go with the chicken along with salad things. No excuses not to eat healthy this week.

Love your healthy grocery hauls. I started reading ingredients like a mad woman in the grocery stores and recently switched to corn and flour combo tortillas ( latortilla factory brand) they don’t have all the modified, mono, hydro and glycosides ingredients in them like the flour carb balance ones do. We are mainly a fresh meat or fish and veggies each meal family but occasionally we like a taco or fajita. Our dessert has been vanilla Greek yogurt mixed with mini dark chocolate chips and we put it in the freezer for 30 mins and it’s the best frozen yogurt treat, yum. 🫶🏻
