For current there's no need to update. V 2.8 or v 3.0 is good because you will find rarely someone who is familar with all the blender tools. You don't need to touch anything which you don't want to use like sculpting, vfx, compositing. Even every experience blender artist don't prefer it. Every year they bring new updates in blender but those are helpful for those who work in that. If you do only modeling you don't need to upgrade. If any update come for modeling perspective you can but those can be complicated and may needs years for beginners to learn. So start from small.
