guacamole with tortilla chips

Everyones favourite Mexican entree or barbecue snack simple quick and fresh guacamole with fresh tortilla chips.

Serving size 4

Ingredients

12 corn tortillas
paprika
sea salt
vegetable oil
2 avocados
2 tomatoes
1 red onion
small bunch coriander
1 lime

Method

Cut the tortillas into 6 equal sized triangles (make sure they are corn based). In a pot or a wok bring the oil to temperature about 150-170c/ 302-338f then place the tortillas into the oil enough to cover the surface but avoid overcrowding.

If the chips get under each other simply dunk them in the oil and it will prevent them sticking. Cook until a light gold colour about 3-5 minutes at the same time there will be minimal bubbles in the oil to say they are cooked.

Remove from oil and drain on paper towel, while hot season with paprika and sea salt. Allow oil to raise in temperature again before starting next batch.

For the guacamole simply dice the onion , tomatoes and coriander. Either peel the avocados or use a spoon to remove from skin. Mash the avocados and combine with the other ingredients then add lime juice over the top and serve.
