Atole de arroz is one of my favorites; it reminds me of a warm, semi thick horchata. Enjoy it during these cold mornings/nights!
Recipe:
1 cup rice
4 cups water
2 cinnamon sticks
9 cups milk ( add more if you’d like a thinner drink)
1 can evaporated milk
1 can sweetened condensed milk
1/3 cup sugar
Splash of vanilla
1. In a pot, bring water, rice, and cinnamon to a boil, then lower the heat and cook covered for 15 minutes.
2. Once the rice is done, blend everything from the pot with 1 can of evaporated milk and whole milk. Blend only one cinnamon stick. (If needed, strain the mixture if a powerful blender is not available.)
3. Pour the blended mixture back into the pot, add 5 cups of milk, sweetened condensed milk, a cinnamon stick, and vanilla. Stir continuously to prevent sticking to the bottom. Simmer for
5-10 minutes.
