Crab has never been in my list of favorites until I myself started cooking it, since my Rehan loves crab. He got to taste crab from Shameerka's party, who is one of our close family friend. So I had to start from the beginning, the cleaning session to the cooking.
And crab is on my list now just because it's so easy to clean and cook.
This is how I cook my crab curry dish specially on a lazy day because it doesn't require any complicated directions for cooking. Ingredients which are normally used in kitchen is mixed and made ready. The only thing which you need to prepare is the roasted coconut powder. I usually pre-cook and store it in my fridge, which is very convenient for my cooking. This idea was given to me by my favorite dear friend Jasi, who s my husband's friend, Riyas's wife, whom I met during our last visit to London. So here is the method :
Preparing roasted Coconut Powder:
Heat a pan.
Add 1 or 2 cups of coconut, or even more according to the required quantity you are willing to store,
Add few shallots sliced and few curry leaves.
Roast all together till the coconut is brown and crispy.
Let it cool.
Grind till you get a fine powder.
Store it in an air-tight container.
Note: Never use a wet spoon while using it for cooking, always make sure you use a dry spoon.
