I’m in New Zealand and Maori have a legend that the sun has two wives and right now he’s lingering with his winter wife…ie up north with you! We have short days and cold nights but soon he’ll speed back to his summer wife ( ie south) and linger with her for a while. And you’ll be in darkness then, sweets, while we go swimming.

Lovely as always! Let your pancake batter sit for about five minutes before cooking your first one. One reason the last pancakes are better than the first ones is because the batter has thickened.
