New Orleans Pralines

I didn't think my Praline recipe could get any better ... until I added one ingredient I learned of when I visited New Orleans ... cinnamon!

Ingredients
1½ cup sugar
1½ cup light brown sugar
¼ teaspoon salt
¾ cup evaporated milk
⅓ cup white karo syrup
1 teaspoon butter
¼ teaspoon ground cinnamon
1 teaspoon pure vanilla extract
2 cups pecan pieces

Instructions
Place sugars, salt, milk, and karo in a medium saucepan. Cook on medium heat to soft ball stage, (keep stirred to keep from sticking on bottom). Remove from heat. Mix in butter, cinnamon, and vanilla. Add pecans, and combine. Stir until mixture thickens slightly. Drop by spoonful on freezer paper.

These are lovely! Thank You for sharing your time-tested 3/4 cup measure is seldom found, therefore requiring 2 measures: the 1/2 and the for clarifying and confirming that weather has no effect on cooking candy -- (it's the cooking heat/boiling process that forms the crystal body). However, I have never seen wax paper tear when removing Pralines, though there is bleed-through of the wax onto the underneath surface. Which is why newspaper under wax paper, a cookie sheet, or a silcone mat is needed. Parchment paper doesn't offend this way.
