My late mother loved using ginger in her cooking, especially for dinner items. Her steamed fish (清蒸魚) and ginger scallion oil (薑蔥油) were amazing! She lived in Guangzhou and moved to New York in the 1980’s. She was a fantastic cook. I still have her recipe for the ginger scallion oil. I miss her and my late father a lot. They are in my heart and memories always.
