Recipe: 200gm Tuna Steak per person. Egg white with 1 tsp of sesame oil beat with a fork. paste tuna with a liberal coating of egg white mix using a food brush. Spread a plate with a mix of salt and pepper to taste and mixture of white and black sesame seeds. I couldn't get black sesame at supermarket so used chia seeds as substitute. coat the tuna incl. sides in the seed mixture. cover and refrigerate for 30-60 mins to prevent mixture from coming off during cooking. cut 1 red and one yellow capsicum into strips. cut the greens portion of 3-4 spring onions into thin asian slices. 1/2 cup chopped cilantro (fresh coriander for the initiates) 1/2 cup of chopped fresh mint leaves. 6-8 Kaffir fresh lime leaves chopped fine. 6-8 snow peas (per person) cut in thirds in Asian slices. Heat 1 tbsn of rice bran oil (olive oil can be used but it's going to impart it's own taste to the dish), 2 tsp of sesame oil. microwave a 1/2 cup of cooking Sake until boiling. When the oil is hot drop in the capsicums and give a quick flash around the pan, add the Sake and let it boil off (cant get my sake to ignite - too low alcohol), add 1/3 cup rice wine vinegar, 1/3 cup of mirin 1/3 cup of dark soy sauce and 2 tbsp sesame oil. bring mixture up to boil for now more than 2 mins. pour into a mixing bowl. Meanwhile get the water boiling for your soba noodles. mine come packaged in portions so I added 2 portions for two people. From boiling 3.5 mins and drain immediately in colander, rinse cool but not cold. Mix into the capsicum mix. add the spring onions, cilantro, mint and lime leaves, plus a bag of baby spinach to the capsicum mixture.
Finally cook tuna. 1/3 cup of rice bran oil. Get oil really hot. Drop in a steak. tilt the pan and laddle hot oil over the top of the tuna with a dessert spoon. cook side 1 for 1.5-2 mins and side 2 for 1 min. wrap tuna in tinfoil. Repeat for the rest of the tuna steaks. drain oil from pan and flash the snow peas in hot pan for 1-2 mins. Assemble salad on plate incl. snow peas. Cut the tuna as in the video. Optionally squeeze some fresh lime juice on the tuna and sprinkle with Japanese shichimi pepper. Enjoy

I just made this. It was really good. I’m going to make it again, but marinate the tuna prior, and don’t be shy with the amount of liquid used in the sauce for the pasta. The noodles sucked it up like a sponge.
