I tried the recipe Gabby sent out in her news letter. It's maybe the 5th time I've made mashed potatoes in my life. Definitely the first time I've made any kind of cottage pie. I sub'd potatoes for sweet potatoes. And Impossible meat for real meat. My family loved it. I haven't gotten complements on this since my best blueberry pie over the summer. Thank you Gabby for sharing that recipe and inspiring me to cook more and different styles of food.

Love seeing Gaby working with ATK! Those empanada wrappers are what I remember growing up with, my mom and I would make a bunch and freeze them so I could heat them up for myself when I wanted. Also that apron is super cute!
