Mini Lasagna Cups


3 fresh lasagna sheets
1 small ball mozzarella
1 yellow, orange or red pepper
1 cup mushrooms
1 small jar tomato sauce
1 tsp dried oregano
2 garlic cloves
2 tbsp olive oil
1/2 tsp each of salt and pepper
1) Preheat the oven to 375 degrees Fahrenheit.
2) Grate the cheese, chop the pepper and mushrooms and place both in separate bowls.
3) Place the tomato sauce in a mixing bowl and add oregano, salt and pepper. Chop garlic and add. Mix.
4) Cut each lasagna sheet into 12 squares.
5) Rub olive oil into a 12 cup muffin tin. Place a bit of sauce in each cup and begin layering in lasagna sheets, sauce, vegetables, cheese and repeat until cups are full and all of the lasagna squares are used.
6) Bake at 375, uncovered for 30-35 minutes or until golden and bubbly.

Serves 2
