Just the idea I was looking for!
However, I would disagree with one of your previous statements below. Any food can develop bad bactirias if not fresh or not well refrigerated. I personally eat steak tartare made with row beef on regular basis and never gotten sick. It’s actually a delicacy in lots of countries.
I will try your idea with steak tartar, I think the ingredients will make it taste like Sushi tuna.

It becomes comes to chewy if you did that! You need to cut the meat up a lot better!
