Johan commented at 17:15 that they are talking about simulating the little ice age (as opposed to scripting it). Seems difficult to do in a way that doesn't feel like the game picks a random period of time for it — but maybe that's acceptable. Wikipedia lists the following potential contributing factors:
"Several causes have been proposed: cyclical lows in solar radiation, heightened volcanic activity, changes in the ocean circulation, variations in Earth's orbit and axial tilt (orbital forcing), inherent variability in global climate, and decreases in the human population (such as from the massacres by Genghis Khan, the Black Death and the epidemics emerging in the Americas upon European contact).

The English Channel freezing over would be an awesome one in a thousand campaign event. Would love it to be a unique event that sparks it after multiple rare events coincide to create this borderline supernatural geological event freezing over the channel

About the revolutions. I'm more inclined to accept an indirect effect between climate and rebellions.
A study I read linked periods of uprising and rebellion to food scarcity, from ancient times all the way to the French Revolution in 1789 (preceded by 2 years of famine) and the Arab Spring in the 21st century.
Food scarcity used to be very dependent on the climate, whether it be too cold or too warm, or too wet or too dry. Extended periods of a certain kind of weather directly impacted food scarcity. As such there's an indirect link between climate and revolts.

So in game I'd argue weather should impact food production and a lack of food should occasionally cause rebellions.

To my understanding, the *engine* works on a much more abstract level than having provinces on a map (although the engine may have special features that makes that type of game easier to make). Remember that Stellaris is also a Clauszewicz game. If it is like Unreal Engine, for instance, the main concern of the engine is to handle file formats, graphics shaders and the graphics pipeline (on a very abstracted level that makes it easy to render many different kinds of things), memory organization of game objects etc. etc. On top of the engine comes the game code, which implements game specific things. I seem to recall (can't find the quote) that Johan said that the inability to change the terrain is a graphical issue (difficult to make it look correct or something like that), but I would imagine that it is not because the engine couldn't render it, but something like that it would be an issue with the transition from one state to another in the way they have decided to generate the texture for the terrain in the current game code. For instance, it could be because the terrain has gradual transitions at the borders between different types, and currently these are pre-generated at startup, and it would require some work to make it able to re-compute it during the game in a way that looks good during the transition. This is just my guess though.

What you said about winter requiring fur goods, for example, was my ideas as well in mind with that comment question. That while Napoleon army did have supplies but clearly missed out on fur supplies or something like that.
And well, each area/region with own different climate/weather would require specific sort of goods and not just the same "generic" supplies. Because while some types of supplies are good for one place, it is useless in some other place. So in some sense, there comes this strategic thinking/planning as well, as in what types of goods, and how much, will you put into that army supply.

2:00 I DID play EU2 about from when it came out til EU3 came out. I don't remember being able to send armies across the ice. Either I've forgotten, or I never knew that! And I was on the Paradox forums during EU2 (it says I joined in 2001), so I think I should have known? yeah, I've probably just forgotten. Happens when you move on to the newer versions, and EU3 came out on 07.

The impact of cold for cold regions is same with impact of hot for hot regions lol, they better add both add cold and hot instead of only cold

Sweden marched from Poland (which it was occupying at the time) across Germany to Jylland and then crossed Lilla Bält to Fyn and then Stora Bält to Lolland and only then from Lolland to Själland. The Danes offered peace at this point, which Sweden accepted gaining the eastern part of Denmark which is today southern Sweden aswell as some other territories. But only half a year later with the Swedish army still outside Copenhagen Sweden again declared war with the intention of conquering all of Denmark Norway, due to reinforcements from their continental allies the Danes were able to reconquer Jylland and Fyn but couldn't break the siege of Copenhagen, peace was signed after the Swedish king suddenly died which reversed some of the previous treaty and the Swedish army returned home by boat.

I started playing Europa Universalis with EU2, which I fell in love with...even and also because it's more "arcade-ish" compared to the other chapters.
I preferred the unlimited diplomacy interactions, even if fewer types were available compared to the other ones.

I feel like some degree of scripting climate (inc. winter severity) does make sense, even though technically the player can influence that (think mongol invasions) that's never going to be simulated and having a varying severity would be nice.
Now granted, that does add in the possibility to pre-plan using those set winters (or climates generally i suppose, a supremely hot summer could change stuff in its own way) to your own advantage, which would make for fun gameplay might become a bit repetitive? it would also constitute an obvious point of player advantage over the AI and also over newer players.
