Low Level Niman is very safe and not flashy. High Level Niman is devastating and is the form that has techniques for Double bladed Sabers. See: Exar Kun.

Okay so admittedly the Forms in canon are a mess, and you've done a good job working around that, I just have some corrections/elaborations as someone who has studied the 7 Forms for over 20 years in a way not dissimilar to HEMA:
Makashi was specifically for 1v1, it wasn't good at crowd control or blaster deflection.
Ahsoka uses Shien, but weirdly the variant Djem So, used by Anakin and Luke, is a more fleshed out variant than the main Form.
The wiki might say otherwise but Maul definitely uses Juyo and not Niman, based on the descriptions of each.
Niman doesn't just take the low level techniques and Juyo doesn't take the high level ones, but I really like that idea and think it makes a lot of sense.
Niman tries to balance all 5 Forms while relying on the Force to compensate for the lack of distinct advantage. Juyo is more the antithesis of all 6 Forms, being incredibly erratic and unpredictable.
And of course the variant Mace created, Vaapad, is basically a Force technique and not really a saber form so I see why you didn't include it.

You're dismissing one crucial element of Niman, while not necessarily as demanding as the other forms, its broad technical focus means that integration of force attacks become more potent in lightsabers sequencing, and if you tailor your toolkit to yourself, and take your Niman to the highest degree, you get something very different than a "diplomat's form." Paired with a fighter like Cao Cen Durach, or Exar Kunn, its effectively the trickster's form.

You forgot to add in the forbidden form.

Can't remember what the name is but it's shtick is quickly turning off the blade to get around defences then reigniting it to exploit the opening.

Also Tràkata, turning the blade on and off mid fight to create the void/openings! Discouraged by Jedi AND Sith for being too dangerous and cheaty.

Niman is lame unless you're incredibly talented. Then it becomes like... Arguably one of the best forms. It's the MMA of lightsaber forms.

Sure Niman feels bland but I would love to see a master of the form that comprises of techniques that not only work but work in unison.

Heck, throw in the more force-dedicated techniques and the Niman user can control the fight.
