Hey Denise - chin up from the UK. My son has coeliac disease and I can tell you that there has never been a better time to have this diagnosis. Firstly, you will feel lots better after cutting out the gluten from your diet - more energy, better sleep, etc. And the food choices are so much better now than ever, and they taste good too. In fact, it's simpler for us all to eat gluten free as a family. On top of that, there's the high-protein diet that Joel serves up which my son also loves. Hope you are feeling good about it!

Roel, I usually tuck the thin point about a third of the way under the tenderloin and then tie it up. It makes an even round that cooks more even and insures everyone gets a nice even thick slice. You did a great job on that one!

Oh no! Now I cannot think of anything but juicy and tender BBQ beef tenderloin with garlic butter! Dry aged and Wagyu is all good and fine, but a lovely piece of beef tenderloin is a feast!

I like to cut and lay that point up the rest of the backstrap before I tie it up. Then its more evenly cooked. Unless I have people with different requests for med/well, they get smaller pieces that way!

I used to buy tenderloin quite a bit as they had a "Buy one get one free!" deals($35Aud/$21.50Euro per kilo) but my tenderloin/eye fillet was always round to begin with. All I ever had was salt with it and now regretting not trying it with something else.
