Man I love how Beth is married to a YouTube Star, has three of the most adorable boys in the world: yet can steal the spotlight at least once per episode.

With ~30 years experience of making gingerbread houses, I can say it is always soooo much easier to decorate first and build after the pieces are decorated. Only thing is, don't decorate the roof to the apex part (and if you have chimney, you need to leave space for that..). And really, there is no set rules on how to do it "correctly". If the attaching is done with molten sugar, then it might be easier to have blank walls etc, so you can hide the dripping with decorations. But if the gluing is done with the white stuff, then it really doesn't matter if the walls are decorated. (and here the gingerbread houses are traditionally eaten on Epiphany. So shorter the time the house is exposed to "elements" the better imo) :D
