Iron Chef Spicy Shrimp Cocktail

Ingredients

Shrimp:

2 bay leaves
1 teaspoon black peppercorns
1 pound (16/20) shrimp, head-on if possible, thawed if frozen, peeled and deveined with tails on
Lemon wedges, for garnish

Sauce:

1/2 cup ketchup
2 tablespoons prepared horseradish
1 tablespoon lemon juice
1 teaspoon Thai sweet chile sauce
1/2 teaspoon Worcestershire sauce
Dash of hot sauce, such as Tabasco

Directions

For the shrimp: In a large saucepan of water, add the bay leaves and black peppercorns. Bring to a boil. Line a sheet pan with paper towels.

For the sauce: In a medium bowl, combine the ketchup, horseradish, lemon juice, chile sauce, Worcestershire sauce and hot sauce.

Add the shrimp to the water and cook at a very low simmer, stirring, until the centers are fully cooked and no longer translucent, about 3 minutes. Transfer the shrimp to the lined sheet pan. Chill for an hour before serving.

Serve the shrimp with the cocktail sauce and lemon wedges.

I've been making my cocktail sauce that way for years. The shrimp - buy them in the shell, preferably with the heads on. Clean them - pull off the head and throw it with head goo into the pot. Remove the vein, dump it, keep the shell, throw it into the pot with the head. Repeat. Add the suggested spices - pepper, bay leaf, whatever. Cover the shells with water, bring to a boil, let it simmer and brew for 15-20 min, while you make that first martini (gin please). Using the spider, remove the shells and head, bring the liquid back to a boil. (It's 1000x more flavorful than Chef Geof's version). When it reaches the boil, add the shrimp. lower the heat to low to medium, bring the liquid just up to the boil - 2-3 minutes. The shrimp are done. Remove, cool or eat. Half the flavor of the raw shrimp is in its shell, and normally, we just throw it away. Oh, you can recycle the boiling liquid. It freezes perfectly and can be reused. No you aren't going to die!

4:04 “You saw the horseradish. It’s not too much.” Actually it is. Both Alex and Jeff said so. And even if I didn’t believe them, the expression on his face after he takes a bite tells me all I need to know. I wouldn’t serve this to guests unless I hated them.

Gave zero reason why he didn't use salt, and said "end of story." No Geoffrey, that's not how it works. If you knew why you weren't using salt, you should have told the rest of us. Go sit in the corner and count to 100.

Take the time to remove the entire shell. When you get to the end, gently pull it apart, and grab the middle "fin" point at the end of the tail. The entire thing should come off easily, revealing another bite!
