I haven't made a coconut cake in so long. My mother died when I was 19. And the last time that I made one she was alive. But that was so long ago. It probably sounds silly but I was fighting back tears while watching this. Being with her in the kitchen baking pies and cakes, talking and laughing at the things she'd say are some of my favorite memories. And I like that it's a triple layer cake. It looks delicious.

So I've made this several times but WITHOUT the coconut flakes or the coconut extract. I also halved the recipe and made cupcakes. I baked them at 350 for 15 minutes and it yielded about 17 to 15 cupcakes depending on how much I filled the cups. Her vanilla cake recipe just called for too many ingredients for me due to my laziness. But yall this is sooo good. The cupcakes are so soft and fluffy. You don't even have to ice them because they are so good by themselves. She did such a great job on this recipe yall, it's definitely worth a try and still tastes amazing without the coconut.
