Wow! This is way better than all of the recipes I have seen. All of the recipes online have you cut the entire rind with all the pith and boil it till tastless and then add sugar, water and orange flavor. The rind is nothing more than a tastless medium.
Your recipe uses only the sweeter outer part of the rind. I may try this.

Thanks so much for walking us through this. I've always wanted to try but have always been a bit intimidated by the recipes in my books without pictures. Might I suggest though using organic oranges if you can find them and/or washing the oranges very well first. Think of all the handling to get them on the shelf at the store. Great Job!!

Thanks for the video. I just harvested some of my neighbor's three trees--lemon, orange, tangerines. 60 gallons. My wife got so mad that I got so many home (She's overwhelmed by large quantities). Gave a bunch away as gift baskets for the Lunar New Year (I'm of Asian descent). And this morning, I did about 20 oranges. But it's gonna be crazy trying to process as many as I can before they rot! If you got any suggestions, gimme a holler!

This is NOT candied orange peel; it is candied orange ZEST, and there is a VERY significant difference in flavor, texture, and use.
