Ingredients -
Mini Egg & Crème Egg Cupcakes –
230g Granulated sugar.
135g Plain flour.
35g Cocoa powder.
1 tsp Baking powder.
1 tsp Bicarbonate of soda.
135ml Whole milk.
30ml Vegetable oil.
1 tsp Vanilla extract.
125ml Boiling water.
Bake at 180˚c/350˚f for 20-25 minutes.
Mini Egg Brownie –
180g Butter.
330g Dark chocolate
4 Eggs.
1 ½ tsp Vanilla extract.
150g Plain flour.
½ tsp Salt.
50g Mini Eggs.
Additional mini and/or micro eggs (for the top of the brownie).
(Optional)
Melted milk chocolate (for drizzling).
Mini/micro eggs (for decoration).
Bake at 180˚/350˚f for 35-40 minutes
Mini Egg Popcorn Bars –
280g Mini marshmallow (I used white).
55g Butter.
90g Popcorn.
Mini eggs (for the filling and decoration).
White Chocolate (for drizzling).
Milk chocolate (for drizzling ).
Allow time for it to chill.
Carrot Cake –
300g Butter.
300g Light brown sugar.
6 eggs.
300g Plain flour.
2 tsp Baking powder.
300g Grated carrot.
85g Walnuts, roughly chopped.
85g Raisins.
Bake at 180˚c/350˚f for 35-40 minutes.
Cream Cheese Icing –
600g Icing sugar.
100g Butter.
250g Soft cheese.
Carrot Cake Truffles –
300g Carrot cake (the scraps leftover).
100g-150g Cream cheese icing.
250g white chocolate, melted.
Allow time for them to chill.
