Undhiyu | Undhiyu Recipe | How to make Gujarati Undhiyu

Undhiyu is a very special Gujarati curry that is popularly made in the winter season with the fresh produce. Undhiyu is made by simmering a variety of vegetables with a green masala made from coconut, coriander leaves, aromatics and spices. Undhiyu is generally a semi-dry curry that is served with puris, but you can make it like a gravy sabzi.

Vegetables that are traditionally used in Undhiyu are -
--- Baby Potatoes
--- Small brinjals or eggplant
--- Raw Banana
--- Ratalu or Purple yam (Replace with sweet potato or arbi if unavailable)
--- Suran or Yam (Replace with sweet potato or arbi, if unavailable)
--- Surti Papdi (Replace with any flat beans or green beans, if unavailable)
--- Fresh toovar (Replace with green peas or edamame or hyacinth beans, if unavailable)

Methi Muthia is deep fried and added in undhiyu. This recipe includes the instructions to make muthia as well.

Beautiful recipe! We have never tasted Undhiyo but we have heard so much about this flavourful dish. Will definitely try preparing it at home by following this recipe 😃👍🏼. Btw- what do you pair undhiyo with? Chapati/Poori?
