California Roll Dessert Parfait
sweet rice pudding, crab and avocado mousse, garnished with candied nori and cucumber crisps
Sweet rice pudding
1 ½ cups whole milk
½ cup short grain sushi rice
¼ cup sugar
¼ teaspoon salt
¼ teaspoon ground ginger
3 tablespoons sweet rice vinegar
2 tablespoons sake
◦ Bring rice, sugar, salt and milk to a boil -- watch carefully for boil overs
◦ reduce to simmer, cover, and cook until rice is tender
◦ When tender, scrape into bowl.
◦ Fold in vinegar, sake, and ginger and chill until use
Candied Nori
1 packet of nori
simple syrup (have him explain -- 1 part sugar, 1 part water, brought to a boil)
◦ Preheat oven to 350
◦ Brush both sides of nori in simple syrup
◦ lay on baking sheet
◦ bake for 5-7 minutes at 350
◦ remove and let cool until needed
Cucumber Crisps
1 Cucumber
¼ cup olive oil
1 tsp chile flakes
1 tbsp brown sugar
◦ preheat oven to 300
◦ in large bowl, mix the oil, chile, and brown sugar
◦ slice cucumbers very thin.
◦ toss cucumbers with oil mixture
◦ spread into single layer on sheet tray
◦ bake at 300 until dry and crisp
Crab and Avocado Mousse
2 chilled firm-ripe California avocados
1 1/2 tablespoons fresh lime juice
3/4 cup whole milk
1/2 cup sugar
1/2 cup well-chilled heavy cream
¼ cup candied ginger, finely diced
½ pound lump snow crab meat
¼ cup pickled ginger, finely diced
¼ teaspoon salt
◦ Finely dice the ginger (pickled and candied) with the crab meat and salt. Set aside.
◦ In food processor, puree avocados, lemon juice, milk and sugar.
◦ Scrape into bowl
◦ Fold in crab mixture
◦ In separate bowl, whip cream
◦ When it reaches medium peaks, stir ¼ into the avocado mixture to lighten it.
◦ gently fold the rest of the whipped cream into the avocado mixture
◦ Cover and refrigerate until use.
Plating
◦ spoon alternating layers of rice pudding and avocado mousse into parfait glass
◦ shred some candied nori between layers (optional)
◦ garnish with nori and cucumber chip.
