For baati

1 cup Bhuna chana
1 Finely chopped onion
2 cloves of finely chopped Garlic
1/2 inch finely chopped Ginger
2 finely chopped Green chillies
1/4 tsp Jeera
Pinch of Ajwain
Pinch of Kalaunji
Salt
1 tsp Mustard oil
1 small Laal mirchi ka achaar
Lemon juice (as per taste)
Coriander leaves
Steps
1. Take bhuna chana and remove the outer covering
2. ⁠Grind this into a fine mixture
3. ⁠Now add all the ingredients. Mirchi achaar should be mashed into the mixture
4. Take 1 cup whole wheat flour in a bowl. Add pinch of ajwain, salt and 1 tblspn refined oil. Mix this then add water and knead the dough
5. ⁠Take dough and add the filling inside it. You can cook this in air fryer for 15 mins or a tandoor for 30 mins.
6. ⁠Take it out when it’s golden and brush it with ghee

For chokha

- Roast 3 tomatoes on gas till the outer skin is charred. Peel off the layer and mash it. Do the same with 1 brinjal
- ⁠In a bowl take mashed brinjal , add tomatoes, 1 mashed potato, 2-3 chopped garlic, 3 chopped green chillies, 1/2 tsp mustard oil, salt , coriander leaves
- ⁠Mix this and it’s done
