For baati
1 cup Bhuna chana
1 Finely chopped onion
2 cloves of finely chopped Garlic
1/2 inch finely chopped Ginger
2 finely chopped Green chillies
1/4 tsp Jeera
Pinch of Ajwain
Pinch of Kalaunji
Salt
1 tsp Mustard oil
1 small Laal mirchi ka achaar
Lemon juice (as per taste)
Coriander leaves
Steps
1. Take bhuna chana and remove the outer covering
2. Grind this into a fine mixture
3. Now add all the ingredients. Mirchi achaar should be mashed into the mixture
4. Take 1 cup whole wheat flour in a bowl. Add pinch of ajwain, salt and 1 tblspn refined oil. Mix this then add water and knead the dough
5. Take dough and add the filling inside it. You can cook this in air fryer for 15 mins or a tandoor for 30 mins.
6. Take it out when it’s golden and brush it with ghee
For chokha
- Roast 3 tomatoes on gas till the outer skin is charred. Peel off the layer and mash it. Do the same with 1 brinjal
- In a bowl take mashed brinjal , add tomatoes, 1 mashed potato, 2-3 chopped garlic, 3 chopped green chillies, 1/2 tsp mustard oil, salt , coriander leaves
- Mix this and it’s done
