Try this Magisk Module (root). Make sure you are connected to internet after installing, clear Google app data, reboot and then activate assistant using gestures (wont work with three button navigation). It should download around 40mb of additional things needed.
I could only get new UI for first use, after that it's a bit wonky. This is the best I could do. And NO, it cannot be done without root.

Hey My security patch is march 5. I haven't received an update since and for some reason system UI keeps crashing randomly. I've decided I want to switch to Pixel Experience plus from the normal PE. Face unlock doesn't work properly in normal version. Sometines the face unlock doesn't work unless you swipe up to unlock it.
