Wow okonomiyaki(お好み焼き) looks delicious. This style of okonomiyaki, in which a thin layer of batter is cooked on top of noodles, is also called Hiroshima-yaki in Japan.
Well, it's a dish made with what you like, so it says okonomi=お好み (favorite) in Japanese.
As a Japanese, I am very happy to have people from overseas know about Japanese culture.

I haven't thought to throw entire bulbs of garlic in on top of roasted potatoes.
I'm going to start doing that now
I love garlic mashed potatos so I imagine roasted is just as good!

You seem to always cut the end of the roast off and start slicing from the middle. What happens to the cut off ends?

Hello Chef, Indian fan here ✨
India has various religions but primarily Hindu and Muslims(islam) and pork is a no no in both. So that's why we don't eat pork.
A lot of people from Christian faith and tribal areas still do.
Hope that answers any confusion.
