Buttermilk Fried Chicken recipe
Brine chicken in a gallon of water, 1 cup kosher salt (or 1/2 cup table salt) and 1/4 cup brown sugar over night. Next morning, remove chicken from brine and place in buttermilk bath for 4-6 hours. Prepare seasoned flour with 4 cups flour, 2 teaspoons of kosher salt, 1 teaspoon pepper, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon paprika. Dredge chicken pieces in seasoned flour; place on rack for 30 minutes before frying. Fry in 360 degree oil until golden brown and chicken floats. So good!!!!

Scalloped Potatoes

Bourbon Street Steak Marinade
4 tablespoon Worcestershire sauce
4 tablespoon soy sauce
8 teaspoon chili powder
8 teaspoon minced garlic
3 teaspoon meat tenderizer
4 teaspoon paprika
4 teaspoon ground black pepper
2 teaspoon cayenne pepper
2 teaspoon onion powder
1 teaspoon ground oregano
4 cup water

Italian Sub recipe; Makes 12 sandwiches
-6 (9 inch) Hoagie Rolls
-3/4 pound deli-sliced provolone cheese
-3/4 pound deli-sliced Genoa salami
-3/4 pound deli-sliced boiled ham
-3/4 pound deli-sliced mortadella
-3/4 pound deli-sliced capicola
-1 head iceberg lettuce, finely shredded
-1/3 cup sliced pickled pepperoncini
-2 tomatoes, thinly sliced
-1/4 thinly sliced red onion
2 teaspoons dried oregano
-6 teaspoons red wine vinegar
-6 tablespoons extra-virgin olive oil
-salt and pepper to taste

Layer the cheese and meat on the bottom half of the bread. Top the meat with the lettuce, tomatoes, onion and pepperoncini. Drizzle each sandwich with 1 tablespoons olive oil and 1 teaspoons vinegar. Sprinkle with the oregano. Season generously with salt and pepper.

Drizzle the cut side of the bread top with the remaining 1 tablespoon each vinegar and olive oil, then place on top of the sandwich. Cut each roll in half. Makes 12 sandwiches.

I know you are incredibly organized and that is key but I can't figure out how you eat SO much better than us and spend less than us. You seriously have some impressive budgeting and cooking skills! One of my goals for 2020 is to be more like you. I spend way too much on groceries and your food looks way more tasty than mine! ❣❣

Shelby if you really want to take your fried chicken over the top, add hot sauce to the buttermilk and allow the chicken to soak in it a few hours. I also add a lot of cajun seasoning to the buttermilk and the flour but I am from Louisiana so... you know. lol Anyway, add enough hot sauce (Louisiana Hot Sauce is best!) until the buttermilk is pink. It will not make it hot I promise. Just an amazing flavor. Love you and your recipes!
