Freezing is definitely the key to smoked KosmoQ meatloaf ! Game changer 🙌

ive never had an issue with mine breaking up. 2lb ground beef, 1lb ground pork, 1 chopped onion, 1 chopped bell pepper, 1 egg, couple to a few spoons of breadcrumbs (i just eyeball it), decent amount of rub, and few squirts of bbq sauce, and a couple hits of that "wash your sister sauce". toss it in a meatloaf pan with cling wrap, sit it in the fridge (not freezer) for a couple hours (ive even got it ready and just put it in the fridge while the smoker got to temp and it still turned out fine), then before cooking add exterior rub and bbq sauce. mine have always been good. they end up with a nice smoke ring and a great bite. havent had one fall apart yet. i do however put it on one of those disposable grill veggie racks just in case, but they have always been ok.
