Carrot Soup 🥕🥣 #shorts

~all you need~
- 1 tbsp olive oil
- 1 medium diced onion
- 3 minced garlic cloves
- 1 tsp chopped ginger
- 3 cups of sliced carrots
- ½ tsp ground coriander
- ½ tsp ground cumin
- 4 cups vegetable broth (or water)
- 1 tbsp lemon juice
- ½ cup cashew cream or coconut milk
- salt + pepper

1- sauté onion, garlic, ginger with oil
2- add carrots and spices and cook for a few minutes
3- add water or broth
4- simmer about 30 minutes, then lemon juice
5- blend, then add cashew cream or coconut milk
