Vegan Eggplant Parm.
Vegan GF Eggplant Parm ❤️ okay this is my ultimate comfort dish. What’s yours? 🥰

Eggplant is a high-fiber, low-calorie vegetable that’s rich in antioxidants, reduces the risk of heart disease, and aids in weight loss and fighting cancer.

Recipe:

2 small/medium eggplants
1 package vegan mozzarella shreds
1 jar tomato sauce (or make your own)

Preheat oven to 425F. Wash eggplant and slice into 1/4 inch discs. Lay discs on a baking sheet and drizzle with olive oil and salt. Bake for 20 minutes. Take a 9x13 baking dish and spread 1/3 cup sauce on the bottom. Layer the baked eggplant slices, then sauce, then cheese. Continue repeating until you used all the eggplant slices and top with sauce and cheese. Cover with tinfoil and bake for 30 minutes at 400F, then remove tin foil and bake for another 20 minutes.
