The c in vermicelli is pronounced ch so you must pronounce it vermichelli but not vermiselli

You are water logging them, they will be yucky like this. No need to rinse in cold water.

Wrong, your supposed to let it just sit in hot water for 15 minutes. Boil water, turn off heat, add noodle, let sit 15 minutes.
