If you lose signal, the radio SHOULD set the speed controller and steering servo to neutral, probably made a mistake in the setup on your transmitter.

Well, that is a perfect example why you should program your failsafe.
And with this deadly contraption, you really need an emergency shutdown/power off with a spiral cable.

As well as the other stuff, that I'm not gonna reparrot, I'm surprised the receiver didn't shut down when it stopped receiving data, like a heartbeat signal to keep it going. Did it just "lock on" to the last data packet received?

You need to setup failsafe on the receiver when no signal it will cut signal to the esc the power immediately. Or also have key switch to your feet or arm like jet ski.
