Sunday Roast with Brooklyn Beckham

Brooklyn Beckham and I make a tasty Sunday Roast.
Prime Rib
3 bone rib roast - dry aged/brined
Butter - 16 oz
Rosemary - 8 sprigs
Thyme - 12 sprigs
Garlic - 8 cloves minced
Salt & pepper
Preheat oven to 200F. Mix butter with rosemary, thyme, garlic. Season steak with salt pepper generously and slather on butter. Place in oven and cook until 133F. Remove and tent with foil until internal hits 135F. Let rest 40 mins. Switch oven to 475F convection roast and cook 6 more mins. Rest another 30 and slice
Roast potato
Yukon gold - 8 peeled
Rosemary - 5 sprigs
Thyme - 6 sprigs
Garlic - 10 cloves
Olive oil - 200g
Beef fat - 200g
Preheat oven to 355F. Peel and cut potatoes and soak in water 30 mins. Boil in salted water until soft and slightly falling apart. Remove and let steam on baking tray. Heat beef fat and olive oil in a roast pan and add potatoes. Mix until potatoes look shaggy, add garlic and place in oven. Cook one hour, mixing even 10 mins. Add rosemary and thyme, cook additional 20 mins. Strain and season with salt.
Yorkshire pudding
Eggs - 200 ml
2% milk - 200 ml
Bread flour - 200 ml
Beef fat
Mix eggs, milk, salt, and flour and let sit at least 30 mins to one day in fridge. Preheat oven to 425F . In a yorkshire pudding pan, add tablespoon of beef fat in each and heat in oven. Pour in cold batter until almost at top and bake 15-20 mins.
Madeira gravy
Butter - 50g
Shallots - 4 minced
Madiera - 200 ml
Beef stock - 1 quart
Porcini mushroom - handful
Sweat shallots in butter. When soft add the Madeira and reduce till dry. Add beef stock and porcini mushrooms and reduce till syrupy. Season with salt and pepper
Carrots
Bunch carrots - trimmed
Carrot juice - 1/2 cup
Thyme - sprig
Honey - 1 tbsp
Butter - 2 tbsp
Add butter to pan and sauté carrots. After about 5 mins, add carrot juice and thyme. When reduced, add honey and butter and baste. Cook till al dente
