Chicken and Kale Caesar salad

Recipe by Gordon Ramsay
1 bunch kale, stalks removed and leaves torn
sea salt and freshly ground black pepper
olive oil
2 skinless chicken breast, butterflied
1 head chicory, leaves separated

For the dressing:
1 garlic clove, peeled and roughly chopped
4 anchovy fillets, drained and roughly chopped
1/2 tsp Dijon mustard
2 tbsp. grated Parmesan cheese, plus extra to serve (optional)
juice of 1/4 to 1/2 lemon, to taste
1 tbsp. extra virgin olive oil
2/3 cup plain yogurt

Note: "You can also dress this salad up to two days in advance, which will tenderize the leaves further."
