1 large bulb of shallot sliced thing (mandolin) - then salted to get the water out
4 Tbsp Gochugaru / Cayenne Pepper
1 Tbsp Szechuan Peppercorns
1 Tbsp Salt

Why cook the garlic first instead of cooking all the ingredients together? I've heard charred garlic tastes bitter.
