Dave your left over pieces are rear braces (Note: the holes you thought were for doors)to stop it from collasping to the side.

16:07 - That appear to be the BACK of the unit (noticed the exposed particle board. Also, those extra holes are to accommodate those 'extra bits'.

NOTE: The shelves were screwed into the sides so no need for the back reinforcement strips to be installed, which would have caused the tubs in one shelf to poke out anyway.

You need to place a Ring Camera at the 'Dumpster'. Anytime someone drops an item off, you can see it and jump on it.

The business that work for gave me a bunch of spare bins like that. I've been trying to figure out how to use them at home in my shop. Your arrangement has solved my problem. Thanks Dave!

Those types of trays are dust, dirt and grime accumulators.
By the time David Reid closed down - their trays contained close to a tonne of dust, dirt and grime.

looks like those extra bits are meant to reinforce the back of the unit to keep it square, that's what those holes are for that you said were for for the doors. Very similar to Ikea kitchens, a lot of thought has gone in their designs making it very easy to install.

Now you need an LED strip on the underside of you bench, to illuminate your bins. Nice solution !!

You should stick a 6m ply board to the back . It will prevent shleves from racking.

Now add some led strips under the shelves, and a PIR under the desk, so when you reach under, it lights up the plastic bins.

It's funny how much your lab resembles mine in terms of the amount crap on top and under the bench.
I'm also in the stage of sorting stuff out over and over again until i can get it to fit in the shelves. :)

The reason they have the door mountings eventhough you did not specify it is just because they are the standard carcases. They will most likely come off the production line like that as standard.

The biggest problem with most flat-pak is they are under designed in the fasteners so it falls apart fast - it should have more than just 3 screws -. Also most of the strength is dependent on the backing - without it it rhomboids - and how it's attached, ie, if it's mdf with nails it falls apart quickly, if it's ply with screws it lasts.
You can pull the pin out of the plastic shelf supports.
