Oh, the dear and delicious Brazilian crumble grape cake, the famous ‘cuca’ (from the german Kuchen which means 'cake')! This recipe is very dear to me because that’s one of the cakes moms and grandmas make all the time, either with grapes, apples, bananas, ‘goiabadas’, dulce de leche, no matter what deliciousness you put in, and when combined with the crunchy sweet crumble, is undeniably one of the best south Brazilian cakes ever!

INGREDIENTS:

Preheat the oven to 356 F / 180C

FOR THE CRUMBLE:
1 cup all-purpose flour
1 cup sugar
1/4 cup vegan butter

BATTER:
4 cups of all-purpose flour
1 cup of sugar
2 mashed bananas or 2-3 tablespoons of GBB
5 tablespoons of vegetable oil
2 -3 cups of grapes (smaller grapes are better for this recipe)
2 cups of plant-based milk
1 tablespoon of baking powder

METHOD:

Add all the dry ingredients except the baking powder to a large bowl mix everything to combine
Add the wet ingredients, mix gently without overworking the batter, add the baking powder, and again, mix very gently.
Grease and flour a baking dish, add the cake batter, add the grapes, then the crumble.
Bake it for 35/40 minutes at 356F / 180C

Baking dish measurements: 26cm x 26 cm x 7 cm // 10.5 x 10.5 x 2.7 inches

CUPS MEASUREMENT:
1 cup = 250 ml / 8.45 oz
1/2 cup = 125 ml / 4.22 oz
1/3 cup = 85 ml / 2.87 oz
1/4 cup = 60 ml / 2.02 oz

My mom (Bavaria) used plums when they were in season. Usually sugar plums. I miss her cooking.

My Grandma use to make this but with Apricots or Plums. Both worked really well, especially the slightly tart plum with the sweetness in the strudel. She also made one that included mashed potato but no fruit. The potato made it nice and moist. The more traditional kuchen was a yeast cake with the strudel on top without fruit. It took more time to make and was often made by a great aunty of mine so I'd get some that way. Of coarse none sadly were Vegan with the egg, butter etc but of coarse, like most things it can be veganised. I'm inspired to make some by this video. 🙂😋👍

I remember that cake! You brought out great memories. So that’s where the word “cuca” comes from. Ha, didn’t know. I also remember when I was a child, my family and I were on a trip and we stopped in a couple of small towns with a big German community and some didn’t speak a word in Portuguese. Gotta make that cake!

Oooh that looks great! Thanks for the historical knowledge! I grew up on blueberries or coffee cake style, but just saw a date/orange juice mixture that might be fun in a crumble. Maybe with pistachios on top.

I've eaten Raspberry Crumble. But this is first time I've seen Grape Crumble. It looks absolutely divine and a dessert for the Gods. ☺❤

Hi Jana, I made this today but cheated a bit. I used a cake mix and added unthawed strawberries with some sugar and lime juice in it. It is absolutely delicious. Im having it tonight with vegan whipped cream.

I made this today with black grapes. It's wonderful! It's perfect for serving with coffee. I have lots of blackberries growing around my house. I think this recipe would be perfect for them also. This is the first recipe I've tried from this channel, and I'm very happy with it!
