Bro look into how a bistecca alla fiorentina is cooked, it’s something like what you did but then they put it vertically to rest on the bone so that the bone itself conducts heat in the meat for even cooking

For those of you wondering porterhouse and t-bone are the same cut. However, t bone is usually cheaper as it is typically cut thinner and has less of a filet migon on it

don't judge me, this is my opinion only.
muscle is majority water, so I don't like putting oil first then salt. oil created a barrier, so the salt will have trouble penetrating the meat. so I prefer salt it first(I prefer dry cure overnight or at least 20minutes) then put oil after so that it won't stick and have a nicer sear.

You can use a sous vide and a grill. My favorite way is sous vide rare for 4 hours then a flaming hot grill sear.
Delicious.

And cut out oil on steaks. It kills the taste.
Use ghee I'd you need to.

Flip steak upon the bone end to release the meat, and enter the low heat/bake phase. Takes like 2min. You need a hot spot, and a cold side.

If you get a nice thick porterhouse you can stand it on bone and the bone will conduct heat throughout the steak.
