Hi Jose, I’d recommend you try Indian (specifically : punjabi) Achaar, which is basically an indian version of pickles. It has alot of variations like- mango achaar made with unripe mangoes, carrot/lemon/ginger achaars too. They’re tangy with a little bit of a spice kick. Try them with stuffed parathas. The best one is Aaloo parantha (stuffed with potatos). And a cup of some good Indian CHAI.

Hey, take your Vlasic jar Lids, sand them a little bit with really fine sandpaper, and then spray paint them whatever color that would look best in your kitchen. A coat of clear protection over the top makes for perfection, and all your jars will look like you spent a bundle on designer ware!

Thank you Jose, been wanting to learn how to make pickled carrots. I miss seeing them in Mexican restaurants. Only one that I know in Chicago that still puts a bowl of them oh your table with salsas to have with your food, I loved them with torta de lengua(beef tongue sandwich) they use a certain bun that you don’t find in stores. Maybe in some Mexican bakeries but I’ve never found them and it’s not bolio. Sorry for going from pickled carrots to that certain bread. The torta just went so good with the pickled carrots. I will be following your recipe!

I LOVE rice vinegar... my new thing is blending 4 vinegars [⅓C white vinegar, ⅓C rice vinegar, just under ⅓C organic ACV plus big drizzle of good balsamic! 3 Tbsp sugar, no bay, mustard seeds and mixed peppercorns.

I’d swap the rice vinegar for a distilled white to make it sour instead of sweet. I’d also use a bigger jar and add broccoli, cauliflower, and some assorted chilis to it as well.

That's the way people have always done jalapeños pickles in Mexico, they add carrots, onions, garlic, bay leaf...😅

I love pickled anything. fyi, you cut off the tops. The carrots are the root, also bay leaves have tannin that helps keep crunchy
