I love that you don't edit out mishaps and glitches in the cooking process. Thank you for tons of great videos and witty commentary.

Learned how to cook poached eggs when I was under 10, I always loved them and asked my mom to show me how to cook them. My favorite is right out of the hot water onto buttered toast and put a bit of real butter on top of the yoke then salt and pepper, its wonderful, I have had this for dinner with toast and jam, still love it 50 years later

I asked my mom to make me poached eggs and she said no. when i said it was easy she challenged me to make them myself. I've never even boiled water or cracked an egg but followed this video and they come out great. Little over cooked but tasted good. thx chef john<3

How much Acid did you say you have to take to make this? I took about 2 tabs and have lost my mind, ended up going somewhere else and sleeping in the woods. Should I take 1 tab or a half tab? I really want to make this.

and you're probably thinking... isn't that a waste of expensive vinegar? yes... yes it is. lmfao

thumbs up for continuing on with the tutorial instead of stopping and getting fresher eggs and new water. we learned more from this because of it.

I love your anecdotes!
"Isn't champagne vinegar a waste?"
"Yes, yes it is!"
Brilliant!

Finally, a chef that cooks eggs properly, none of that underdone, dribbly, snotty stuff with the whites. This looks delicious!!! 😋

Poached eggs is the one thing I got from my father. I was always a picky eater, but he showed me how to eat them, all runny and gooey. Thanks for this video, you give a great straight-forward explanation that so many cooking shows don't.

I do hope that your throat is better for your next video. You seem to have had some trouble towards the end while you were telling us of your very noble plans to cut calories.
Brave Chef John. The sacrifices you do for us.

Before adding the egg to water, I whisk the water in a circular motion, then before the water stops swirling I add the egg. The loose egg white then wraps itself around the bulk of the rest of the egg. Works a treat with older eggs. Nice tip with the vinegar. Thanks :)

A nice tip for checking the 'freshness' of your eggs, is to put them into a bowl or glass of water. If they sink to the bottom they're nice and fresh. If they float or aren't sitting on the bottom, then maybe don't use them for poaching. Meringue is your best option for older eggs, Meringue actually works a whole lot better with old eggs. - Enjoy.

Just to share a tip w you all.
Give the water a nice spin. Drop the egg into the centre of that whirlpool.
The egg spins and most of the egg white will be retained.
Enjoy!

@wafflethug cold water is fresh, and hot water is staler and sits in the water heater.

Wow! Thank you chef John, I've easily watched over 500 of your videos so far and this is such an awesome piece of knowledge I've just learnt that will instantly be used. Now to watch the rest of them.

As a someone who raises chickens and sells eggs. Thank you for the info. I will credit you when I share it with customers.

Love these videos, but I think that Julia Child's method is the best: before you add the eggs to the simmering vinegared water, you prick the shell with a pin and submerge it in boiling water for about 10 seconds (I found 8 to be better). It definitely holds better!

Thank you for posting! I like the way you are so candid & make an error (say use fresh eggs, then use OLD EGGS!) LOL! You do like to conserve whenever possible. Good to know.

I watched this video and the next day I made poached eggs perfectly! I was delighted! Thanks for the video!
