Desserts that are refreshing pair best with BBQ. Especially in the summer time. My Granny made Pineapple Upside Down Cake for me all the time growing up. I love cooking this easy dessert outside on a pellet grill because everything tastes better when you cook it outside. This dessert is so easy, as all you have to do is be able to read the instructions on the store bought cake mix.

I love this cake, it was one of Dad's favorites too. I wish he'd have lived long enough to try one baked in a smoker, he would have loved that.

also... have you ever tried it with peaches? I use the exact same recipe, just trade out the pineapple rings for fresh peach halves when I have them. Works just as well with canned peach halves. I also use a plain yellow cake mix instead of the pineapple cake mix. It makes an equally tasty peach upside down cake. Quick, easy, delicious 😋
