Elantra N for my money. the GTI and SI are also great though. I guess availability would play into choice as well with the way things are currently.

Another one if you want an old classic car: 1983 - 1987 Honda CRX (Go for an Si if you can find one)
The American cars came with a 1.3L or 1.5L single cam four cylinder making 70-90 horsepower depending on the model. Some of the Japanese cars came with a 1.6L ZC twin cam D series making around 130 without mods that you can easily swap in like I did. Go for a fuel injected model if you can find one, the carbureted cars weren’t incredible. You can also swap in a B series or a K series but anything over 200hp is very hard to drive since the car only weighs 1800lbs and is front wheel drive. The CRX was offered with a 4 speed automatic or a 5 speed manual. The CRX doesn’t have any safety features though or drivers assists like traction control, abs, power steering, cruise control, power windows, power mirrors, power seats, etc. Some CRX’s were offered with a power sunroof though, which is great for cruising. It’s a very small car with no backseats, but surprisingly a lot of cargo space. Beware, some of the body panels are made of plastic and are very brittle but can easily be replaced with carbon fiber from Heeltoe Racing, and the rear quarter panels like to rust around the wheel wells. Also, some of the CRX’s had a foam rear spoiler that loves to crack and mold, but they can be replaced with a carbon fiber spoiler or a fiberglass spoiler.
Mint condition CRX’s can sell for literally anything, I’ve seen one grab $30, 000, but one with a little bit of wear and slightly higher miles is perfect, and you can probably find an Si for under $8, 000 or a DX or HF for under $5, 000. My Si has 127, 000 miles and my fuel pump is almost 40 years old, but it turns over almost every time and loves to go once it does. Parts are available but can sometimes be hard to find. But as long as you take care of the CRX’s they can last a lifetime.

There's a part of me that really wants to go out and buy the last Camaro. I'm getting the V8, for sure, but I still think it'd be worth the buy.

Don't forget about dealer mark ups, gotta love those mark ups. When a manufacturer says the car didn't sell so they'll stop producing it isn't because it didn't sell its because no one wants to pay the dealership mark up price. Car companies die by dealerships, funny how they made it illegal to purchase from manufacturer.

Since I live in Utah, my pick would probably be the Civic Si. There are a lot of things to see and do at high elevation (~8000 feet), so that forced induction plus insane fuel economy and aftermarket fun are a great combo.

I just have to convince my family that there are sports cars that can be driven daily cause they seem to think that only basic cars can be used year round

I pickled the Elantra N, and absolutely love it. I will say that the GR86 punches well above its weight and looks amazing, the Civic Si is a hatch (which the Elantra should have been) and is better inside, the GTI has always been great, and the Camaro and Mustang are classic muscle goodness that can handle, and the Miata is always the answer, so there are no losers here at all!
