CHERRY CRUMB BARS
July & August are the only times when we get these amazing US Northwest Cherries in India. It’s the most juiciest cherries you will get only around this time. So go ahead and make the most of it. I have in past, shared many cherry recipes; this time am sharing unbelievably delicious dessert- Cherry Crumb Bars. Recipe -
- In a pan, on medium flame, take 2 cups chopped Cherries, cook for 5-10 minutes
- Let cherry become tender and juice comes out
- Slow down flame to low & Add 1 tbs lemon juice and 1 tbs corn starch (corn flour)
- mix immediately and cook for 5 minutes
- Take out the mixture & let it cool down
- In another mixing bowl, add. 1/2 cup of melted butter
- Add 1/2 cup of sugar & Vanila Essence
- Whisk them nicely so that suger melts
- Add 1 cup of almond flour into the mixture & 1/2 cup of maida
- Add 1 tsp baking powder & 1 tsp baking soda
- Mix everything well
- Take half of this almond flour mixture and place on the bottom of the lined baking pan
- Press it properly and make a nice thin layer
- On that spread cherry mixture nicely
- With help of fingers, sprinkle the remaining half of almond flour mixture
- Sprinkle some sugar on the top
- bake for 25 min at 180 degree celcious in pre-heated oven or till you get nice golden color
- Remove from oven & let it cool down completely
- Cut nice squares and store in fridge. Should easily stay good for a week
