a bit random but..
Hello! Here is my recipe for a dairy-free pancake stack!
ends up with 5 pancakes in total, feel free to duplicate or split this recipe!
ingredients:

3/4 cups self-raising flour (180 grams)
1 & 1/2 tbsp sugar (30 grams)
1/2 tsp salt (2.5 grams)
1/4 cup coconut milk (60 ml)
1/4 cup water (60 ml)
2 tbsp maple syrup (40 ml)
1/2 tbsp browned butter (2.5 ml/grams)
1 egg

steps:

browning your butter:

heat your pan to medium-high heat, and allow your pan to heat before adding your butter. stir quickly before lowering the heat, then keep stirring until your butter cools a bit, and stir frequently until the butter turns golden brown, once golden brown remove from the heat and set aside.

making the batter:

add your flour, sugar, butter, salt, egg and maple syrup in a bowl, in a separate bowl mix together your coconut milk and water, before adding this to the rest of your ingredients. Mix thoroughly until it's smooth and the ingredients are fully incorporated.

cooking:

heat up a large pan to medium-high heat and allow it to heat for 3-6 minutes. once heated scoop 1/4 cup batter at a time and carefully cook each pancake.


serving:

serve with jam, maple syrup, ice cream or anything of choice, enjoy! let me know how you liked it! :)
