Maja Blanca is a popular Filipino coconut pudding made with coconut milk, evaporated milk, condensed milk, cream style corn, corn kernel, cornstarch and sugar. Ingredients of Maja Blanca ;
250 grams cornstarch
1 big can evaporated milk 354 ml
1 big can condensed milk 300 ml
1 can cream of corn or cream style corn 398 ml
1 can corn well drained 341 grams
3/4 cup or 1 cup white sugar (adjust according to taste)
2 cups water plus 1 cup to dissolve cornstarch
cheese for toppings (optional)
Cooking Procedure For Maja Blanca Recipe:
1. Combine 2 cups cold water ,3/4 cup white sugar, 2 cans coconut milk, 1 can cream style corn, and 1 can corn kernel in a large saucepan and bring it to a boil and cook for about 5 minutes.
2. Add 1 evaporated milk and condensed milk and bring to almost boiling point.
( Cooking tip- Don't bring milk to rapid boil ta avoid milk curding.)
3. Switch stove flame to low and add cornstarch mixture slowly while continuously stirring until it thickens .Continue stirring for three minutes more.
(Cooking Tip- if the mixture is too thin prepare and add more cornstarch mixture slowly)
4. Transfer cooked Maja Blanca to a container and refrigerate for 2 hours or until set. Grate cheese for toppings.
