Living With The Seasons - The Magic of Summer | Summer Solstice Vlog

Come and spend a day with me to celebrate nature and the Summer Solstice!
In this video I want to share with you how living alongside nature's seasons and cycles and celebrating the changes of the seasons can absolutely be done even living in the city, and how living this way can make life even more so beautiful...
I will share with you some things I try to do that help me live more seasonally and in tune with nature whilst in the city, and how these simple things can make life so magical as well as develop one's creativity and sense of connection to nature and our world.
I hope that this video may bring you a moment of peace and happiness today.

~Rose Syrup Recipe: will make around 300ml syrup.

-about 1/2 cup, dried organic edible rose petals (make sure they arent sprayed or from the florist) or 1 full cup fresh petals
-250ml honey or 250g sugar (white/brown) I like honey...
-300ml water

-Bring the water and honey/sugar to a boil and then add in the petals.
-Simmer for around 20 mins until water has changed colour and the mixture is thicker.
-Let this cool and then pour into a sterile container/jar and seal. It can be kept in the fridge for up to 6 months.


~For the strawberry Galette:

-You can either find a simple ''puff pastry'' dough recipe, but I simply purchased a ready made one which is very easy to find and saves time
-800g fresh starwberries, cut into quarters (you can use defrosted ones too, however they tend to leak alot of juice in the baking stage so fresh is better as there isnt so much liquid then...
-3tbsp white caster sugar or 3tbsp icing sugar
-2tbsp cornflour/ cornstarch (helps to suck up the liquid and juices otherwise the pastry will be wet)

1)Simply mix the strawberries, sugar and cornsflour in a bowl

2)Slightly roll out your dough if you need to make it fit your baking tin or tray. Line your tray or grease with a bit of butter and place the dough inside.

3)Place your strawberry mixture in the centre of the dough and start going from the outside in and folding the dough in towards the centre so all the strawberries are safe inside, it almost looks like a ''pouch'' but leave the top of the galette slightly open so you can see the berries...

4)Brush the top of the pastry a little with a bit of butter or coconut oil so it will be golden once its finished.

5)Bake for about 30mins at 180C or until the top is lovely and golden and enjoy!


~ DIY GLUE

-3/4 cup of water
-2 tbsp corn syrup/ golden syrup
-1 tsp vinegar
-2 tbsp corn starch/corn flour
-3/4 cup cold water

1)In a saucepan stir together the water, syrup and vinegar and bring the mixture to a full boil.
2)In a separate bowl, mix together the corn starch and cold water until it has a smooth consistency.
3)Slowly stir the corn starch mixture into the boiling syrup mixture and cook for a further 1minute.
4)Remove the mixture from the heat and allow to cool slightly before using. Keep this glue in an airtight container and it will last a long time if kept in a cool place.
