For anyone who can't find Gim, you can buy Nori, heat up a pan with a little bit of roasted sesame oil and fry the nori in it until it shrinks in size and becomes more wrinkly. Alternatively you can brush the sheets with oil individually and then cook them.

Compound butters are so tasty, my favorite one is with lemon juice, parsley and garlic. Bit of a hassle to get the lemon juice to mix well, but it's so worth it.

I think gim and nori are the same thing - they're both laver. You can put sesame oil on either of them. And I have used both, and I don't think either one is crispier or more porous - they're exactly the same to be honest.
